Miss O’s Layered Taco Salad

1/2 lb ground beef, browned
1 pkg taco seasoning, your choice of intensity
1 8oz container sour cream
1 cup shredded cheddar cheese
1 8oz container Rawl Foods pico de gallo
1 8oz container Rawl Foods diced bell pepper
1 8oz container Rawl foods diced red onion
in place of precut vegetables, you can use:
1/2 cup fresh chopped tomato
1/2 cup chopped red onion
1/2 cup chopped green pepper
juice from one lime
1 15.5 oz can pinto beans
1 15.5 oz can black beans
1 jar salsa

Cook beef with taco seasoning. Layer ingredients in dish:
1. ground beef
2. beans, drained and mixed
3. 1/2 jar salsa
4. sour cream
5. chopped vegetables
6. shredded cheese

Use lime juice on fresh chopped vegetables, if desired. Chill, then serve with chips.

Spinach Salad

1/2 cup silvered toasted almonds
one bag of organic baby spinach leaves
1/4 red onion, sliced thinly
1 small cucumber peeled and sliced
5 sliced strawberries


1 organic lemon
2 tbsp. Bragg organic apple cider vinegar
1 tbsp. Bertolli extra light olive oil
1 tsp. Simply Organic poppy seeds
1/4 cup sugar

Squeeze juice from lemon for dressing, and use 1/2 tsp of lemon zest in dressing. For lemon zesting in structions, click . Shake dressing well. Combine all salad ingredients, mix, and serve with dressing. Enjoy!
