Southern Caviar

1 15oz can corn, white or yellow
1 15oz can Black Eyed Peas
1 15 oz can Black Beans
2 15oz cans Ro-Tel tomatoes
1/2 red pepper, diced
1/2 green pepper, diced
1/2 red onion, diced
1 small bottle Zesty Italian Dressing

Drain and mix all cans in large bowl. Add other ingredients, mix together, and chill. Serve with tortilla chips. Squeeze lime juice over mixture to taste.

Pimento Cheese

1 8 oz. package cream cheese, softened
1/3 cup plain, vanilla, or Greek yogurt
1/8 tsp garlic powder (optional)
2 cups shredded sharp cheddar cheese, softened
1 (4 oz.) jar diced pimentos, drained

Beat cream cheese, yogurt, and garlic powder until creamy. Add cheese and mix until slightly lumpy. Mix in pimentos. Chill.

To make a cheese ball, roll chilled pimento cheese into a bowl, and then coat in shredded pecans. Serve with chips or crackers.

Egg Salad

5 hard boiled eggs
1/2 tsp salt
1/8 tsp pepper
1/4 cup plain yogurt
1/4 cup mayonnaise
optional: 1/8 cup each of celery and onion, finely chopped

Peel eggs – separate white from yellow. Chop the egg white. Add celery and onion, if desired. Whisk the yellow, salt, pepper, yogurt and mayonnaise together. Mix everything together and chill.

Fruit Smoothie

Use your favorite fresh or frozen fruit, orange sections, blueberries, strawberries, or 1/2 cup orange juice.

In a blender, combine:
1/2 cup water
3 to 6 ice cubes
1/2 cup vanilla yogurt
1/3 cup fruit or 1/2 cup orange juice

Blend until smooth and thick and pour in glass. Add a straw and serve.

Chocolate Chip Cookies

2 1/4 cups whole wheat flour
1 tsp salt
1 tsp baking soda
1 cup butter
3/4 cup granulated sugar
3/4 cup brown sugar
1tsp vanilla
1/2 tsp water
2 eggs
1 1/2 cup chocolate morsel
1 cup chopped nuts (optional)

Sift flour, salt, baking soda together. Combine butter, sugar (white and brown) vanilla, water. Beat until creamy. Beat in eggs, add flour mixture. Stir in chocolate chips and nuts. Bake at 375F for 10 to 12 minutes, until texture of your choice.


4 cups oats
1/2 cup wheat germ*
1/2 cup coconut
1/2 cup almond pieces
1/2 cup walnut pieces
1/2 cup sunflower seeds
1 teaspoon vanilla
1/2 cup olive oil
1/8 cup water
1/2 cup honey

In medium bowl, mix wet ingredients together. In large bowl, mix dry ingredients together. Add wet ingredients to dry and mix well.

Pour onto ungreased cookie sheet and bake at 350 degrees for 20 minutes, stirring every 10 minutes.

Reduce heat to 250 degrees and continue to cook until lightly browned. Remove from oven. When cool, store in airtight container.

*NOTE: For homemade wheat germ, grind wheat with grinder at a coarse setting. Sift through a small mesh strainer, allowing flour to fall into a bowl. What remains in the strainer is the germ. Save flour for other uses.

Yogurt Parfait

Organic vanilla yogurt
Fresh or frozen strawberries and/or blueberries, unsweetened

Place 1/4 cup yogurt in bottom of a glass, and add layer of 1/4 cup fruit and another layer of 1/4 cup yogurt. Top with granola. Refrigerate until time to serve.

Serving suggestion: I serve mine in parfait glasses I found at the flea market. For less than five dollars, I got a set of six. They look like a tall, thin glass on a short pedestal. The parfaits look beautiful in them, and it makes people feel special when they eat out of them. This recipe can also be used as a dessert recipe for guests.
